The Tojiro Flash DP Damascus 27 cm chef's knife has a forged 63-layer Damascus steel blade and a reinforced laminated handle; overall length 40 cm, weight 290 g.

With its 27 cm blade, this is the largest chef's knife in the Flash DP Damascus series, designed for efficient processing of large fish, fillets, roasts and long ingredients, where shorter blades would need more strokes. Slicing in a single stroke gives a more even cut surface on both meat and sashimi ingredients.

The forged 63-layer Damascus steel with a VG-10 core forms a striking wave pattern and provides a very durable cutting edge as well as outstanding looks. The robust 290 g knife has a reinforced laminated handle fitted with an 18-8 stainless steel insert and bolster.

Maintain the edge with a whetstone or honing steel; professional sharpening once a year is recommended. Do not cut frozen food, bone, or on hard ceramic surfaces.
