The Opinel Parallele No.122 poultry boning knife has a 13 cm X50CrMoV15 stainless steel blade (55–57 HRC), a beech handle and a hand guard, 26.2 cm in overall length.
A poultry boning knife is characterised by its short, relatively stiff blade (2.5 mm thick): this stiffness lets it be guided along bones and joints without the blade flexing. X50CrMoV15 steel (55–57 HRC) is developed for kitchen conditions, resists corrosion and is easy to resharpen regularly on a whetstone.
The hand guard prevents the hand from sliding towards the cutting edge if it slips, a critical safety feature in poultry boning, where strong pushing pressure is needed. Recommended for removing the thigh bones, breastbones and joints of chicken, duck and other poultry in home and semi-professional kitchens alike.
Additional manufacturer information:
For removing sinews and bones from meat and poultry. The short, strong blade resists twisting.
